BUTTERHORNS - MIKE MIHEVC
Cut 2 sticks of butter into 2 cups of sifted flour
Add 3/4 c of sour cream and 1 egg yolk. Mix well with hands
Shape into 3 balls. Place each on floured wax paper and refrigerate for at least a couple of hours. Preheat oven to 375 deg
Roll a ball into a circle (like a pie crust)
Spread with filling over entire circle: Filling is: 3/4 cup sugar, 1/4 cup finely chopped walnuts, 1 teaspoon cinnamon
Cut inot wedges and roll up beginning with the wide side.
Bake on ungreased cookie sheet for 18-25 minutes at 375 deg
Dust with powdered sugar when cooled
LOADED CAULIFLOWER - LINDA OLMSTEAD
Preheat oven to 425 deg
2 heads cauliflower (approximtely 6 cups) broken into bite sized pieces, cooked about 8-10 min, drained and cooled.
6-8 stips of bacon, cooked and crumbled (or use Real Bacon Bites from a jar)
6 TBL chopped green onion
1 cup mayo
1 cup sour cream
4 cups shredded chedder cheese
Combine sour cream and mayo and then add the cauliflower. 1/2 of the bacon. 1/2 of the onions and 1/2 of the cheese. Mix well and place in a 9"X13" baking dish. Cover with the remaining bacon, onions and cheese. Bake 20 minutes or until cheese is melted.
DANISH RICE PUDDING - JUDY JENSEN
1 quart whole milk, 1/3 cup sugar. 3/4 cup MEDIUM GRAIN RICE, 1 1/2 tsp vanilla, 1/4 tsp salt and 1/4 tsp cinnamon
Place all ingredients in a saucepan and bring to a boil while stirring frequently. Then simmer on the lowest setting while stirring every 10 minutes or so until thick (20-30 minutes). Stir MORE frequently near the end. Remove from heat. The pudding will thicken as it cools. If it is too thick for your liking you can add whipped cream or half/half. If you use half/half it will be creamier if you mix it in with a hand mixer. VARIATIONS: For a festive occasion the Danes add ground almonds and serve with cherry sauce on the side. For Christmas they mix in one whole white almond, whomever gets the portion with the almond gets a prize provided by the maker of the pudding. You can top with additonal sprinkles of cinnamon, whipped cream.
Editor's note: I made this using no-fat milk and it turned out fine (just in case you are watching your fat intake. This pudding is really delicious and is not hard to make - just takes some time.
CHEESECAKE - JUDY SLATER
Preheat oven to 350 deg. Totally enclose a spring form pan in aluminum foil (not over top, just bottom and sides)
Beat 2 cups sugar with 4 8-oz packages of cream cheese. Then add 7 eggs, ONE AT A TIME BEATING EACH ADDITION FOR 5 MINUTES. Add 1 1/2 pt sour cream and 1 tsp of vanilla.
Pour into pan and bake for 1 hour. TURN OFF OVEN, DO NOT OPEN THE OVEN DOOR FOR 12 HOURS. DO NOT PEEK!
This is a delicious smooth cheesecake.
PARTY MIX - PAULINE TRACY
This is more of a candy than the Chex Party mix that you might be used to.
DRY INGREDIENTS: 3 cups each of CORN CHEX, RICE CHEX and WHEAT CHEX, 1 can MIXED NUTS, 3 cups MINI PRETZELS
COATING: 2 pounds of WHITE CHOCOLATE WAFERS (or WHITE CHOCOLATE CHIPS) and 3 TBL COOKING OIL
MELT the chips with the cooking oil, stir about 3-5 minutes.
ADD the dry ingredients and mix. Spread onto two cookie sheets. Cool and refrigerate or freeze about 20 minutes to harden. Break into pieces and enjoy.
